Well, who knew there was such a thing!
With the heat we’ve been having, watermelon is the perfect treat. Here’s a simple salad I adapted from Epicurious and used to make often when I was cruising on the boat in hot climates:
Mix together: ¼ cup fruity-flavored extra virgin olive oil, 1-2 Tablespoons freshly squeezed lemon juice, ½ teaspoon chili garlic sauce, salt and pepper to taste.
Cut slices of: watermelon, sweet onions, red onions, avocadoes and sun-dried or oil-cured black olives. Use the quantities that suit your taste Arrange all on a platter.
Chop and Crumble: Italian parsley or cilantro and goat’s milk feta
Assemble: Drizzle dressing over the salad, sprinkle with parsley and cheese
YUM! Sweet, salty, savory, and scrumptious!
